Ingredients
- Salad Potatoes - 4 pieces
- Crushed ice - 1 cup
- Carrot - 1 piece
- Onion - 1 head
- Dill - 1 bunch
- Smoked Chicken - 4 pieces
- Croutons - to taste
- Salt - to taste
- Vegetable Oil - 1 tablespoon
- Water - 3 qt
Step by Step guide
Step 1
Soak the peas in water for 3–4 hours. This will help them cook faster later. After soaking, drain the water, rinse the peas, place them in a pot, and bring to a boil. After boiling, drain the water again and rinse. Fill with clean water equal to the amount of soup and bring to a boil again. I call this process 'removing the gas'.
Step 2
When the peas boil, add the diced potatoes, bring to a boil, then reduce the heat and let it simmer until soft.
Step 3
Sauté the finely chopped onion and grated carrot in vegetable oil. When the vegetables are golden, pour in the broth and let it stew.
Step 4
Meanwhile, take the soup off the heat and let it cool slightly before blending it into a puree. Use an immersion blender to puree the cooked peas and potatoes. If your puree is too thick, dilute it with boiling water and return it to the stove.
Step 5
Add the sautéed onion and carrot.
Step 6
Add the smoked wings. Cover with a lid and let it simmer on low heat.
Step 7
A few minutes before serving, taste for salt. The smoked wings will add some saltiness to the soup, so it's risky to add salt at the beginning.
Step 8
Serve with fresh dill and croutons.
