Pea Soup with Curry and Celery

Ingredients

  • Sour Cream - 2 tablespoons
  • Onion - 1 head
  • Salad Potatoes - 3 pieces
  • Olive Oil - to taste
  • Bay leaf - to taste
  • Carrot - 1 piece
  • Celery stalk - 0 oz
  • Pea shoots - 10 oz
  • Herbes de Provence - to taste
  • Curry - 0 oz
  • Mushroom seasoning - to taste

Step by Step guide

Step 1

Soak the split peas for a couple of hours, rinse, pour boiling water (you can use broth) and cook for 15 minutes.

Step 2

Dice the potatoes and add them to the peas. Cook for another 10 minutes.

Step 3

Chop the onion and carrot as for a regular sauté, and sauté until soft in olive oil. Cut the celery stalks into small cubes, add them to the onion, and sauté for another 3-4 minutes, mixing in a pinch of sugar, the vegetable mixture, curry, and one and a half teaspoons of soy sauce, stir, and cook for a couple more minutes. Add the finished sauté to the soup and cook for 10 minutes until ready. One minute before turning off the heat, stir in the sour cream and bay leaf.

Step 4

Serve with croutons and fried bacon if desired.
