Pea Soup with Ham
Ingredients
- Olive Oil - 1½ spoons
- Yellow Beets - 17.6 oz
- Onion - 2 heads
- Carrot - 1 piece
- Celery stalk - 3 pieces
- Smoked Ham on the Bone - 2 lbs
- Bay leaf - 1 piece
- Black Cumin (Cumin) - 2 stalks
- Meyer Lemon Juice - to taste
Step by Step guide
Step 1
Place the peas in a large bowl, cover with cold water, and let them soak for 6 hours. Drain.
Step 2
Heat oil in a pot, add finely chopped onion, grated carrot, and sliced celery. Sauté on low heat for 6-7 minutes until the vegetables are soft.
Step 3
Add the peas, diced ham hock, bay leaf, caraway seeds, and 2.5 liters of cold water. Bring to a boil, then reduce the heat and simmer, stirring occasionally, for 2 hours or until the peas are tender. Remember to skim off any foam that forms during cooking. Remove the bay leaf and caraway seeds.
Step 4
Then remove the bones from the soup, let them cool slightly, and cut the meat off. Discard the bones and add the meat back into the soup.
Step 5
Heat the soup, season with salt and pepper, and add a little lemon juice.
