Pea Soup with Ham and Parsley
Ingredients
- Water - 1½ l
- Yellow Beets - 7.1 oz
- Smoked Ham on the Bone - 1 piece
- Onion - 1 head
- Carrot - 1 piece
- Leek - ½ piece
- Bay leaf - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Chopped Sage Leaves - to taste
Step by Step guide
Step 1
Rinse the peas and transfer them to a pot. Cover with water and bring to a boil. Skim off the foam.
Step 2
Meanwhile, cut the pieces of ham from the bone and dice them into small cubes.
Step 3
Add the diced carrot, finely chopped onion, and finely chopped leek to the peas. Then add the ham bone and bay leaves. Season with salt and pepper, cover with a lid, and simmer on low heat for about 40 minutes until the peas are soft. Remove the bone and bay leaves. Blend until smooth.
Step 4
Transfer to a clean pot, season with salt and pepper. Gently heat and ladle into small bowls. Top with ham and parsley.
