Pea Soup with Pork Ribs

Ingredients

  • Pork Skewers - 7.1 oz
  • Semi-Smoked Sausage - 7.1 oz
  • Pea shoots - 7.1 oz
  • Salad Potatoes - 2 pieces
  • Carrot - 1 piece
  • Onion - 1 piece
  • Herbs - 1 bunch
  • Spices - to taste

Step by Step guide

Step 1

Prepare the broth. Place the pork ribs, half of the peeled onion, half of the peeled carrot, bay leaf, peppercorns, and salt into a pot. Bring to a boil, skim off the foam, and reduce to a low heat. Cooking time is about 3 hours. Any broth benefits from slow simmering over moderate heat (without boiling) and the cook's attention (periodically skimming off the foam).

Step 2

Cook the peas. While the broth is cooking, prepare the peas. To achieve a clear broth, rinse the peas thoroughly under running water. I rinse until the water runs clear. The ratio of water to peas is 1:1; cook until soft but do not overcook. There should be a little water left in the pot when done. Divide the resulting volume into two parts (30/70): leave 30% in a bowl and blend 70% into a puree.

Step 3

Prepare the sauté. By this time, the broth is ready; we have removed the ribs and everything else (you can strain if desired, but I usually do not). We will only need the ribs. Set them aside to cool on a plate. Meanwhile, add the potatoes to the broth and cook over medium heat. In a skillet, heat vegetable oil, sauté the onion first, then add the carrot and smoked meats. Sauté until golden brown and add to the broth with the potatoes.

Step 4

Combine the ingredients. In the skillet, heat water (I use hot water from the kettle) and dissolve the pea puree in the water to avoid lumps. Then pour the mixture into the broth (the final mixture should be liquid and fit entirely in the pot). Also, add the remaining peas to the soup.

Step 5

Bring to readiness. Add the chopped herbs and cover for about 20 minutes to infuse flavor (without heat).

Step 6

Serve the soup in bowls, add a piece of pork rib, and place in the oven for 5 minutes. It can be served with croutons, toast, or airy garlic bread.
