- Pearl barley - 1.4 oz
- Milk - 5 fl oz
- Butter - 0.7 oz
- Sugar - 0.1 oz
- Whole egg - ¼ piece
- Water - 23 fl oz
Step by Step guide
Step 1
Rinse the barley, cover with cold water, and cook on low heat, covered, for at least 2–3 hours.
Step 2
Pass through a sieve along with the liquid, bring to a boil, strain, and season with warm milk mixed with raw egg yolk, add sugar.
Step 3
Before serving, add a piece of butter to the soup.
