Petersburg-Style Meatball Soup
Ingredients
- Onion - 2 pieces
- Carrot - 1 piece
- Pearl barley - 1.1 oz
- Sausages - 5 pieces
- Potato - 3 pieces
- Pickles - 3 pieces
- Salt - to taste
- Green peppercorns - to taste
- Bay leaf - to taste
Step by Step guide
Step 1
The most important part of this soup is the meatballs. What is sold in supermarkets cannot be called food — I can't bring myself to say it. Therefore, take some good-quality sausages and squeeze the filling into your palm.
Step 2
Form small balls.
Step 3
Pour cold water over the meatballs, bring to a boil, and simmer for 15 minutes.
Step 4
While the meatballs are cooking, finely chop a couple of pickles, onion, carrot, and potato.
Step 5
Rinse a tablespoon of barley and let it boil in a separate pot.
Step 6
Sauté the pickles, potato, carrot, and onion (you can skip frying the potato, but I do it because it doesn't fall apart in the soup later).
Step 7
Add the sautéed vegetables and barley to the meatballs and cook until the potato is done.
