Ingredients

  • Beef hoof - 6 lbs
  • Ginger - 4.2 oz
  • Onion - 3.5 oz
  • Fish Oil - 5 fl oz
  • Sugar - 0.7 oz
  • Salt - 0.7 oz
  • Vietnamese Spiced Salt - 0.7 oz
  • Cinnamon - 1.1 oz
  • Star anise - 0.4 oz
  • Cardamom - 0.4 oz
  • Rice Noodles - 14.1 oz
  • Cooked Ham - 7.1 oz
  • Veal Tenderloin - 7.1 oz
  • Mild Chili Spice - 0.1 oz
  • Cilantro - 0.2 oz
  • Lime - 0.2 oz
  • Peanut Sprouts - 0.4 oz
  • Spanish onions - 0.7 oz
  • Mint - 0.4 oz
  • Scallions - 2.1 oz
  • Sriracha - 1 fl oz
  • Laoganma Chicken and Chili Sauce - 1.8 oz
  • Mild Chili Spice - 0.4 oz
  • Vietnamese mint - 0.1 oz

Step by Step guide

Step 1

First, you need to prepare a basic broth, which will take about 9 hours. Completely clean the beef bones of any meat and place them in a 7-liter pot with water. Bring to a boil and cook covered on low heat for 8 hours, carefully skimming off the foam. Then strain the broth and pour it back into the pot.

Step 2

Toast the spices in a pan. Place the onion, along with its skin, in the preheated oven at 392°F until the skin darkens and the onion turns golden.

Step 3

Add the peeled ginger (100 g), charred onion, fish sauce, sugar, salt, and Vietnamese salt, cinnamon, star anise, and cardamom to the pot. Cook for an additional 30 minutes.

Step 4

Assemble the soup (5 liters of broth will yield 5 servings). Boil the beef shank in salted water until tender, which will take about 5 hours. Allow it to cool completely, then slice it thinly across the grain.

Step 5

Boil the rice noodles and drain them in a colander.

Step 6

Slice the veal tenderloin thinly across the grain.

Step 7

Slice the white part of the green onion into thin strips about 5–6 cm long.

Step 8

Cut the remaining ginger into thin strips about 1.5–2 cm long.

Step 9

Place the noodles in a soup bowl, top with slices of meat, then add herbs and julienned green onions. Pour hot broth over everything and add both sauces.

Step 10

Place ginger strips on top and season with pepper.

Step 11

Serve the soy sprouts separately, along with lime wedges, mint sprigs, and thinly sliced chili peppers.
