Description

Universal chicken broth, on the basis of which various soups can be prepared. However, broth made from chicken hearts is suitable only for pickle soup. When cooking this soup, you need to pay attention to the amount of thick ingredients. If the soup turns out too thick, you can add more broth during the process.

Ingredients

  • Pearl barley - 1.1 oz
  • Chicken Liver - 3.5 oz
  • Chicken Broth - 20 fl oz
  • Chicken hearts - 5.3 oz
  • Onion - 1 head
  • Potato - 1 piece
  • Pickled Cauliflower - 3 pieces
  • Cucumber Brine - 3 fl oz
  • Bay leaf - 1 piece
  • Butter - 2.1 oz
  • Dill - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

In a heated pot, add 30 grams of butter and sauté the diced onion for about 2–3 minutes. To speed up the process, you can scorch it with a torch. Fried onion is already a 15% guarantee of enhancing the flavor in pickle soup.

Step 2

Prepare the broth from the hearts. Boil 1 liter of water, add the previously cleaned hearts. Bring to a boil and cook for 10 minutes.

Step 3

Once the onion is caramelized and has some browning, add 2–3 pickled cucumbers, diced into small cubes. The smaller you cut the cucumber, the faster it will cook. Lightly sauté the cucumbers with the onion.

Step 4

Add the brine to the pot with the onion and cucumbers. You don't need to add too much. Depending on how salty it is, pour in the necessary amount. It's better to add more salt later. Stew everything together for 5–7 minutes to soften the cucumbers.

Step 5

As soon as the cucumbers are stewed, add the diced potato.

Step 6

Fill half of the pot with chicken broth and the other half with the broth from the chicken hearts.

Step 7

Add the hearts as well.

Step 8

All flavors combine, and the potato cooks. Taste for salt and add the bay leaf.

Step 9

Once the potato is cooked, add the pre-cooked pearl barley (it takes a long time to cook and can overpower the broth's flavor). Add it gradually, watching the consistency of the soup. Stir. The amount of ingredients is up to your preference: some like it thick enough for a spoon to stand in, while others prefer it more liquid.

Step 10

In a skillet, place a piece of butter and thin slices of chicken liver. Sauté the liver and leave it on low heat for a couple of minutes. Season with salt and pepper.

Step 11

Stir the finished pickle soup. Pour it into a deep plate, add a piece of butter and a few pieces of fried liver. Sprinkle with finely chopped dill.
