Ingredients
- Potato - 3½ kg
- Carrot - 28.2 oz
- Onion - 28.2 oz
- Pickled Cauliflower - 28.2 oz
- Pearl barley - 10.6 oz
- Water - 5 qt
- Beef - 29.3 oz
- Bay leaf - 1 piece
- Sour Cream - to taste
- Salt - to taste
- Herbs - to taste
- Vegetable Oil - to taste
Step by Step guide
Step 1
Pour water into a pot. Add the beef and simmer the broth for about 1.5 hours. Remove the meat and cut it into pieces.
Step 2
Pour the sorted and thoroughly rinsed pearl barley with broth. Cover the pot with a lid, place it on the edge of the stove, and steam the barley for 40 to 60 minutes.
Step 3
Cut the carrots, cucumbers, and onions into sticks and sauté them in vegetable oil. Prepare the potatoes.
Step 4
15-20 minutes before the end of cooking, add diced potatoes, sautéed vegetables, pickled cucumbers in brine, bay leaf, and pepper to the boiling broth with pearl barley. At the very end of cooking, season the soup to taste with cucumber brine and salt.
Step 5
Place a piece of meat that has been warmed in broth onto the plate when serving. Serve the sour cream and herbs on the side.
