Description
Pickled cucumbers for winter
Ingredients
- Cucumbers - 4 lbs
- Salt - 2.8 oz
- Mild Chili Spice - 1 piece
- Dill - 6 pieces
- Black Currant Leaves - 5 pieces
- Horseradish Leaves - 3 pieces
- Garlic - 4 cloves
- Water - 1 qt
Step by Step guide
Step 1
Prepare all the ingredients. Rinse the cucumbers and all the herbs.
Step 2
Soak the cucumbers in cold water for 4 hours. If the cucumbers are freshly picked, you can leave them for 2 hours.
Step 3
Sterilize the jar over steam for 20 minutes.
Step 4
Place a layer of leaves at the bottom of the jar, along with some dill and crushed garlic cloves.
Step 5
Place the cucumbers and peppers in the jar.
Step 6
Sprinkle salt on top.
Step 7
Then add the remaining herbs.
Step 8
Pour clean cold water over the cucumbers.
Step 9
Cover the jar with a lid, place it in a tray (excess liquid may accumulate during fermentation), and leave it at room temperature for 24 hours. Then, transfer it to the refrigerator for about 3 days; the brine will first become cloudy and then clear up.
Step 10
Sterilize the lid and seal the jar.
