Pickled Cucumbers with Dill
Ingredients
- Cucumbers - 4 lbs
- Dill - 2 pieces
- Black Currant Leaves - 3 bunches
- Garlic - 3 cloves
- Green peppercorns - 5 pieces
- Salt - 2 tablespoons
- Sugar - 1½ tablespoons
- Vinegar essence - 1 tablespoon
Step by Step guide
Step 1
Wash the cucumbers and soak them in cold water for 3–4 hours, changing the water 1–2 times during this period.
Step 2
After that, place the dill, currant leaves, peeled garlic cloves, and pepper at the bottom of a sterilized jar.
Step 3
Then, vertically pack the cucumbers to the top and cover them with a lid.
Step 4
For the marinade, boil about 1 liter and 200 ml of water. Add sugar and salt, stirring until completely dissolved. Fill the jars with the boiling brine and pour vinegar on top.
Step 5
Seal the jar with a sterilized metal lid using a canning machine. Turn it upside down and wrap it in a warm blanket.
Step 6
Leave the jar in the 'bath' for 5 hours. Remove from the blanket, and store the finished cucumbers in a cool place.
