- Grapefruits - 28.2 oz
- Mild Chili Spice - 1 piece
- Ginger - 1.1 oz
- Cinnamon - 2 pieces
- Star anise - 4 pieces
- Coriander essential oil - 2 spoons
- Mustard Greens - 2 spoons
- Brown Sugar - 14.1 oz
- Champagne Vinegar - 8 fl oz
- Water - 8 fl oz
- Red Grape Juice - 8 fl oz
- Rock Salt - 1½ spoons
Step by Step guide

Prepare all the ingredients.
Step 2
Sterilize the jars and lids over steam for 20 minutes.
Step 3
Peel and finely chop the ginger.
Step 4
Remove the seeds from the chili and chop it finely.
Step 5
Place the grapes, ginger, and chili in sterilized jars.
Step 6
Add cinnamon sticks, star anise, coriander, and mustard.
Step 7
In a pot, combine the wine, vinegar, water, sugar, and salt. Bring to a boil and reduce by one third.
Step 8
Pour the marinade into the jars, filling them to the top, and seal them.
Step 9
Place the jars in a large pot of water (line the bottom with a towel), bring to a boil, and simmer for 10 minutes.
Step 10
Store in a cool, dark place.
