Ingredients
- Green pickled tomatoes - 10.6 oz
- Black Currant Leaves - 3 pieces
- Nigella Seeds - a pinch
- Water - 10 fl oz
- Salt - 0.5 oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Mix water with salt.
Step 3
Add fennel seeds and currant leaves to the mixture.
Step 4
Bring to a boil, then let it cool completely.
Step 5
Transfer the tomatoes to a jar and pour the brine over them.
Step 6
Place a rubber glove over the mouth of the jar and leave the tomatoes to ferment in a dark place for 3–5 days or in the refrigerator for 20 days.
Step 7
Once the glove inflates, transfer the tomatoes to a clean jar and seal (but do not can).
Step 8
Store the pickled tomatoes in the refrigerator for up to three months. If the tomatoes smell pleasantly sour, they are fine; if they smell like a barnyard, they have spoiled.
Step 9
These pickled tomatoes can be used as a condiment for soups, stews, and salads.
