Pickled green tomatoes with lovage

Ingredients

  • Mixed tomatoes of different colors - 2 lbs
  • Lovage - 0.4 oz
  • Nigella Seeds - ½ teaspoon
  • Dill - ½ teaspoon
  • Coriander essential oil - ½ teaspoon
  • Apple Cider Vinegar - 20 fl oz
  • Water - 13 fl oz
  • Sugar - 3.5 oz
  • Salt - 0.1 oz

Step by Step guide

Step 1

Prepare all the ingredients.

Step 2

Wash the tomatoes and lovage, and transfer them to sterilized jars.

Step 3

Pour boiling water into the jars and immediately drain it.

Step 4

Mix vinegar, water, salt, and sugar.

Step 5

In a dry skillet, toast the coriander, fennel, and dill seeds until fragrant.

Step 6

Add the spices to the marinade and bring it to a boil.

Step 7

Pour the hot marinade into the jars and seal them. Allow to cool completely, then store in the refrigerator.

Step 8

The pickled green tomatoes can be tasted after 20 days.
