Ingredients
- Radish - 2 lbs
- Red Wine Vinegar - 1 fl oz
- Sugar - 1.8 oz
- Champagne Vinegar - 1 fl oz
- Water - 3 fl oz
Step by Step guide
Step 1
Wash the radishes, trim the greens (you can leave small green stems), cut them in half, and pack them tightly into a one-liter jar.
Step 2
In a saucepan, heat a mixture of equal parts red and white wine vinegar, water, and sugar (as in previous recipes, the ratio of the two types of vinegar should be one to one with the water and sugar). Wait for the sugar to completely dissolve, then allow the mixture to cool (do not pour it in hot, as this will cook the radishes) and fill a jar to the top with it. Seal the jar and let it sit for three days.
