Pickled Tomatoes with Cilantro
Ingredients
- Ground coriander - 1 bunch
- Tomatoes - 2 lbs
- Garlic - 1 head
- Orange Bell Peppers - 1 piece
- Salt - to taste
- Olive Oil - to taste
- Safflower Oil - to taste
- Vinegar essence - to taste
- Mild Chili Spice - 1 piece
- Ground ancho chili pepper - 1 piece
Step by Step guide
Step 1
Wash the vegetables and cilantro, then dry them.
Step 2
Cut the tomatoes into small wedges.
Step 3
Chop the cilantro, finely chop the garlic or press it through a garlic press.
Step 4
Finely chop the peppers.
Step 5
In a separate bowl, make a dressing from the oils, vinegar, and salt to your taste.
Step 6
Layer the ingredients in a jar: start with tomatoes, sprinkle with the chopped pepper mixture, add cilantro, garlic, drizzle with the dressing, and continue layering the remaining ingredients in the same order. Let the tomatoes marinate for a couple of hours (4–5 hours). Occasionally shake the jar to mix all the ingredients.
