Ingredients
- Spelt - 6 oz
- Butter - 0.7 oz
- Olive Oil - 1 tablespoon
- Garlic - 2 cloves
- Scallions - 9 stalks
- Champignons - 14.1 oz
- Madeira - 1 fl oz
- Ricotta cheese - 8.8 oz
- Puff Pastry - 15.9 oz
- Whole egg - 1 piece
- Water - 25 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Soak the spelt in water for thirty minutes, then drain it in a colander.
Step 2
Add the spelt to a pot and cover with water, then add a quarter teaspoon of salt and cook for 20 minutes. Drain in a colander.
Step 3
Chop the green onions and garlic. Slice the mushrooms thinly.
Step 4
In a pot, melt the butter and sauté the garlic and half of the green onions for a couple of minutes.
Step 5
Add the chopped mushrooms, season with salt and pepper. Sauté for five minutes.
Step 6
Pour in the Madeira and cook for another minute, then mix with spelt and let it cool completely.
Step 7
Divide the dough into two portions and roll each out into squares that are slightly larger than the size of the baking pan. Refrigerate for half an hour. Preheat the oven to 356°F.
Step 8
Add the ricotta cheese to the spelt with mushrooms, along with the remaining chopped green onions. Season with salt and pepper to taste.
Step 9
Place the filling on one layer of dough, cover with a second layer, seal the edges, brush the entire surface with beaten egg yolk, and make a small hole for steam to escape. Bake for 45 minutes.
Step 10
Serve the pie warm or at room temperature.
