Description
Ideally, you should use phyllo dough for this, but I can't find it anywhere. So, I'm using puff pastry and trying to roll it as thin as possible. Ingredients
- Feta cheese - 7.1 oz
- Puff Pastry - 8.8 oz
- Chicken Egg - 2 pieces
- Onion - 1 head
- Garlic - 1 clove
- Parsley - to taste
- Dill - to taste
- Scallions - to taste
- Olive Oil - 4 spoons
- Frozen spinach discs - 14.1 oz
Step by Step guide
Step 1
If you are using frozen spinach, the first step is to thaw it and squeeze out any excess moisture very well. If you have fresh spinach, finely chop the leaves.
Step 2
Finely chop the onion and sauté it in olive oil until golden brown. While the onion is cooking, finely chop the herbs (parsley, dill, and green onions).
Step 3
In a bowl, beat the eggs and add feta cheese, mashing it with a fork and mixing it with the eggs to create a smooth mixture. Add the drained spinach, sautéed onion, chopped herbs, and a couple of tablespoons of olive oil. Mix everything well.
Step 4
Roll out the dough as thinly as possible and cut it into 12 cm squares. Place a couple of tablespoons of filling on each piece of dough, fold it into a triangle, seal the edges, and arrange the pastries on a baking sheet lined with parchment paper.
Step 5
Bake at 356°F for about 20–25 minutes, until the dough is golden brown.
