Piri Piri Shrimp
Ingredients
- Red Long Chili Peppers - 4 pieces
- Shrimp - 2 lbs
- Champagne Vinegar - 6 fl oz
- Garlic - 2 cloves
- Mild Chili Spice - 8 pieces
- Olive Oil - 4 fl oz
- Mixed salad greens - 5.3 oz
Step by Step guide
Step 1
For the sauce, place the long chili peppers in a pot, cover with vinegar, and simmer over medium heat for 5 minutes until soft. Allow to cool slowly, then place the peppers and 3 tablespoons of vinegar in a blender. Add the garlic and chopped small chilies and blend until smooth. While blending, gradually pour in the oil and remaining vinegar. Blend well.
Step 2
Place the shrimp in the marinade, mix well, cover, and refrigerate for 30 minutes.
Step 3
Remove the shrimp from the marinade. Bring the marinade to a boil and cook for 5 minutes until slightly thickened.
Step 4
Preheat the grill and lightly grease with oil. Grill the shrimp, basting with the marinade, for 2-3 minutes on each side. Arrange the salad greens on 4 plates, top with the shrimp, and serve immediately with the chili sauce.
