Description
A variety of ingredients come together quickly and easily to create a nutritious and delicious filling for pita. Pita is convenient to hold, maintains its shape, and prevents the filling from spilling out. The filling consists of cheese and vegetables in bean hummus — all of it is dry enough not to soak the bread but still very nourishing — it contains proteins, fats, carbohydrates, and fiber. Wrap the pita in a bag for even easier eating. Recipe adapted from a cookbook by 'Simple Cooking with Alex Smith.'

- Onion - 1 piece

- Lemon - 1 piece
- Cucumbers - 0 oz
- Tomatoes - 1 piece
- Olives stuffed with lemon - 3 pieces

- Pita - 4 pieces
- Feta cheese - 3.5 oz
- Radish - 2 pieces
- Olive Oil - 0 fl oz
- Black Cumin (Cumin) - to taste
- Cilantro - to taste
- Basil - to taste

- Salt - to taste
Step by Step guide
Step 1
Soak the beans in cold water in advance (for about 8 hours).
Step 2
Peel and chop half a carrot into small pieces, and chop the onion.
Step 3
In a pot, sauté the carrots, onions, and soaked beans in olive oil.
Step 4
Place the tomatoes in their own juice into a pot, adding a little of the juice from the can. Pour in a small amount of water. Cover with a lid and cook for 50 minutes, until the beans are tender. Add cumin and salt, and mix well.
Step 5
Remove the pot from the heat and blend the contents with a blender or mash with a potato masher. If the hummus is too thick, add a little hot boiled water.
Step 6
Pour in a little olive oil. Squeeze a small amount of lemon juice. Mix well, then transfer the hummus to a plate.
Step 7
Slice the cucumber into thin strips and chop the tomato into small cubes. Cut the olives and black olives into rings.
Step 8
Wrap each pita in plastic wrap and place it in the microwave for 20 seconds.
Step 9
Cut the edge of each pita so that it is easy to open and fill with the stuffing.
Step 10
Fill the warm pita with tomatoes, hummus, cucumbers, and olives. Top with feta or brined cheese.
Step 11
Slice the radishes thinly, rinse the herbs, and pat them dry.
Step 12
When serving, garnish the pita sandwiches with slices of radish, cilantro, and basil, and drizzle with cold-pressed olive oil.
