Pizzoccheri Pasta Soup
Ingredients
- Potatoes - 7.1 oz
- Onion - 1 head
- Minced garlic - 3 cloves
- Olive Oil - 4 tablespoons
- Vegetable Broth - 6 cups
- Salt - to taste
- Ground Black Pepper - to taste
- Buckwheat Noodles - 3.5 oz
- Green Cabbage - 3.5 oz
- Fontina cheese - 2.5 oz
- Sea Salt - to taste
Step by Step guide
Step 1
In a large pot, sauté the potatoes with the onion and garlic in oil until all ingredients are soft.
Step 2
Then add a little water, salt, and pepper to taste.
Step 3
Bring to a boil, partially cover the pot with a lid for 10-12 minutes, as the potatoes need to become soft.
Step 4
Once the potatoes are almost ready, add the pasta, cook for 5 minutes, and immediately add the cabbage. Cook for another 5 minutes.
Step 5
Finally, add the cheese and turn off the heat.
Step 6
Serve the soup in portions, adding a pinch of sea salt for flavor if desired.
