Plum Tomato Soup Puree
Ingredients
- Olive Oil - 1 fl oz
- Onion - 1 head
- Plums - 16.2 oz
- Spiced Tomato Juice - 2 fl oz
- Chicken Broth - 19 fl oz
- Thyme - 1 stem
- Brown Sugar - 1 teaspoon
- Chives - 1 teaspoon
- Chopped Sage Leaves - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Tomatoes - 15.9 oz
Step by Step guide
Step 1
Heat the olive oil in a pot and add the finely chopped onion. Sauté for a few minutes until soft, but do not let it brown. Add the pitted chopped plums, leaving 2 whole plums (they will be needed later), peeled and seeded chopped tomatoes, tomato juice, broth, thyme, and sugar. Season with salt and pepper and bring to a boil.
Step 2
Reduce the heat and simmer for 15 minutes. Allow to cool slightly, remove the thyme, and strain the soup through a sieve. Season with salt and pepper to taste. Chill.
Step 3
Serve by pouring into bowls and topping with the finely chopped reserved plums, chives, and parsley.
