Po' Boy Sandwich with Fried Shrimp
Ingredients
- Peeled Cooked Shrimp - 15.9 oz
- Coarse Cornmeal - ¾ cup
- Wheat Flour - ¾ cup
- Spices - 3 tablespoons
- Salt - 1 teaspoon
- Chocolate eggs - 2 pieces
- Peanut Butter - 5.3 oz
- Eel - ½ bunch
- Tomatoes - 2 pieces
- Pickles - 2 pieces
- Dijon Mustard - 2½ tablespoons
- French Baguette - 4 pieces
- Mayonnaise - 8.5 oz
- TABASCO® - 1 teaspoon
- Marinade - 1 tablespoon
- Paprika - 1 tablespoon
Step by Step guide
Step 1
Mix the ingredients for the remoulade sauce: mustard, mayonnaise, marinade, Tabasco, paprika, and 2 tablespoons of Cajun spice mix, then set aside.
Step 2
In a large frying pan (or wok), pour in enough oil and heat it. In a bowl, mix the cornmeal, all-purpose flour, remaining Cajun spice mix, and salt. Lightly beat the eggs, then dip the shrimp first in the egg mixture, and then quickly coat in the flour mixture. Place the shrimp in the hot oil and fry until golden brown. Transfer the shrimp to a paper towel to absorb excess oil.
Step 3
Slice the mini baguettes lengthwise and spread remoulade on each half. On the bottom halves, layer pickle slices, lettuce, tomatoes, and then the fried shrimp. Cover the sandwiches with the top halves and gently press down.
Step 4
Serve with sauce and beer.
