Pork fillet soup with pineapples and pickled green tomatoes

Ingredients

  • Clarified Butter - 1.8 oz
  • Wild Boar Fillet - 17.6 oz
  • Onion - 2 heads
  • Garlic - 1 clove
  • Mild Chili Spice - 1 piece
  • Green pickled tomatoes - 2 pieces
  • Chili jam - 8 fl oz
  • Chicken Broth - 4 fl oz
  • Canned Pineapple Chunks - 1 can
  • Canned Truffles - 1 can
  • Pickled garlic - 1 can
  • Orange Bell Peppers - 1 piece
  • Orange Bell Peppers - 1 piece
  • Orange Bell Peppers - 1 piece
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Dry White Wine - 7 fl oz

Step by Step guide

Step 1

Cut the meat into cubes and sauté in clarified butter.

Step 2

Chop the onion and garlic. Finely chop the bitter and sweet peppers.

Step 3

Add the peppers along with the garlic and onion to the meat and simmer. Also add the pineapples, mushrooms, and pickled onion to the meat.

Step 4

Pour in the broth, wine, and chili sauce. Bring to a boil. Simmer for about 30 minutes. Cut the pickled tomatoes into wedges and add to the soup 10 minutes before it's done.

Step 5

Season the finished dish with spices to taste and serve with a white French baguette.
