Description
Serve with boiled potatoes or stewed cabbage with mustard or horseradish mixed with sour cream. It makes a great substitute for sausage on a sandwich.
Ingredients
- Onion - 3 heads
- Pig's Head - 1 piece
- Garlic - 10 cloves
- Salt - to taste
- Ground Black Pepper - to taste
- Bay leaf - to taste
Step by Step guide
Step 1
Carefully remove the skin from the head in one piece.
Step 2
You can remove the lower jaw and carefully cut off the nose to save space and avoid small bones. Pre-cut all edible parts.
Step 3
Boil the head and all the edible parts (except the skin) with roots, bay leaf, and salt for 3 hours after boiling, then cool in the broth. Remove bones and cartilage.
Step 4
Chop the meat, sprinkling it with chopped onion, salt, pepper, crushed cloves, and garlic. Roll it up in the skin, tying it with twine every 5 cm to form a thick loaf. It's better to use less fat; I use 10% of the meat's weight.
Step 5
Place in boiling broth from the head for 2 hours and let it cool in it. After removing, place it under a weight in a cool place overnight. Store in the refrigerator. Serve cold, slicing into 1 cm pieces.
