Description
Caldo verde is a hearty Portuguese soup made with cabbage and mashed potatoes. The key ingredient is spicy pork chorizo sausage. In terms of mood, caldo verde is reminiscent of our split pea soup: it has a fairly thick texture, and the chorizo adds a smoky flavor.
Ingredients
- Olive Oil - 1 fl oz
- Onion - 17.6 oz
- Carrot - 1 piece
- Potato - 17.6 oz
- Chorizo - 6 oz
- Kale - 21.2 oz
- Garlic - 1 clove
- Red Wine Vinegar - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide

Prepare the necessary ingredients.

Chop the onion coarsely and mince the garlic finely.
Step 3
Chop the potatoes and carrots into random pieces.
Step 4
Heat olive oil in a pot.

Sauté the chopped onion and garlic clove until soft.

Add the chopped potatoes and carrots.

Add half of the chopped chorizo.

Pour in two liters of water, bring to a boil, and cook until the vegetables are tender, about 20–30 minutes.

Blend the soup with an immersion blender, then season with salt and pepper.

Add the kale, sliced into thin strips, and simmer over low heat until the kale is tender — about 5 minutes.

At the end, adjust the soup's flavor with vinegar and salt, and season with pepper.

Serve the soup in a deep bowl with pieces of chorizo.
