Ingredients
- Lightly Salted Red Fish - 23.8 oz
- Salad Potatoes - 3 lbs
- Garlic - 1 clove
- Parsley - 1 bunch
- Vegetable Oil - 10 fl oz

Step 1
Place the cod in a bowl, cover with water, and let it soak for 4 hours. Change the water at least once, remembering to remove any salt from the bottom of the bowl. Then drain the water and pat the fish dry.
Step 2
Next, place the cod and the washed, unpeeled potatoes in a large pot, cover with water, bring to a boil, then reduce the heat and cook for another 30 minutes until the potatoes are soft. Drain the water.
Step 3
Peel the potatoes and mash them as you would for mashed potatoes. If you find any skin or bones in the cod, remove them, crumble the cod, and add it to the potatoes, mixing well. Add finely chopped garlic and parsley. Then add two egg yolks, one at a time, mixing well.
Step 4
Heat the vegetable oil in a deep skillet to 356°F. Using a spoon, scoop the potato mixture and drop the fritters into the hot oil—several at a time, but ensuring they have enough space in the pot, and cook until the crust is golden and crispy.
Step 5
Use a slotted spoon to remove the cooked fritters and place them in a deep, warmed pot (preferably with thick walls, like a Dutch oven) to keep warm while all the croquettes are prepared. Serve hot. They can be accompanied by tomato sauce.
