Ingredients
- New Potatoes - 16 pieces
- Semi-Smoked Sausage - 8 slices
- Olive Oil - to taste
- Mayonnaise - 4.4 oz
- Anchovy fillet - 3 pieces
- Dijon Mustard - ½ teaspoon
- Tarragon - 1 tablespoon

Step 1
Soak bamboo skewers in cold water for 30 minutes.
Step 2
Meanwhile, place the potatoes in a pot of lightly salted water, bring to a boil, reduce heat, and cook for 10 minutes, or until tender. Drain and let cool. Then cut the potatoes in half.
Step 3
Preheat the grill.
Step 4
Cut each slice of bacon into 4 strips and wrap them around each potato half. Thread 4 pieces onto each skewer. Brush with olive oil and grill for 3-4 minutes on each side or until golden brown.
Step 5
For the sauce, chop the tarragon leaves and mix with mayonnaise, chopped anchovy fillets, and mustard. Mix well with 1 tablespoon of hot water and drizzle over the skewers.
