- Butter - 2.1 oz
- Onion - 3.9 oz
- Potato - 15.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Chicken Broth - 28 fl oz
- Chopped Sage Leaves - 2 spoons
- Cream - 5 fl oz
- Chives - to taste
Step by Step guide
Step 1
Melt the butter in a pot and add the finely chopped onion and diced potatoes. Season with salt and pepper, stir, cover with a lid, and cook over low heat for about 10 minutes until softened.
Step 2
Meanwhile, bring the broth to a boil.
Step 3
Pour the broth over the potatoes and add the parsley. Cook until the potatoes are very tender.
Step 4
In a blender, combine the soup and cream and blend until smooth. Season with salt and pepper to taste. Serve garnished with chopped chives.
