- Thyme - 1 bunch
- Green peppercorns - 1 tablespoon
- Bay leaf - 1 piece
- Salad Potatoes - 3 lbs
- Ocean salt - 2 tablespoons
- Garlic - 5 cloves
- 33% Cream - 4 cups
- Horseradish Leaves - 2 fl oz
- Grated Pecorino Pepato Cheese - 6.3 oz
Step by Step guide
Step 1
Preheat the oven to 392°F. Grease a rectangular baking dish with butter.
Step 2
Wrap the thyme, pepper, and bay leaf in a piece of cheesecloth.
Step 3
In a large deep skillet, combine the peeled and thinly sliced potatoes, salt, garlic cloves, and cream. Add the cheesecloth with the herbs. Bring to a boil, slightly reduce the heat, and simmer uncovered for about 10 minutes until the potatoes are tender.
Step 4
Remove the cheesecloth with the herbs and garlic and add the horseradish.
Step 5
Transfer the potatoes with the sauce to the dish, smooth it out, and sprinkle with cheese.
Step 6
Bake until golden brown and the potatoes are tender, about 30-40 minutes. Let it sit for 15 minutes before serving.
