Description

Potato latkes are crispy pancakes made from grated potatoes, often served with applesauce or sour cream. They are a popular dish during festive occasions and can be enjoyed as a side or a main dish.

Ingredients

  • Potato - 2 lbs
  • Onion - 1 head
  • Chicken Egg - 2 pieces
  • Wheat Flour - ½ glasses
  • Chopped Sage Leaves - 3 spoons
  • Safflower Oil - 1 tablespoon
  • Ground coriander - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Sour Cream - to taste

Step by Step guide

Step 1

Peel the potatoes and grate them using a coarse grater. Transfer to a bowl and let sit for fifteen to twenty minutes, then squeeze out and drain the excess liquid.

Step 2

Finely chop a medium onion. Add the onion to the potatoes along with everything else except for the oil and sour cream (set aside a bit of parsley). Mix well.

Step 3

Heat a skillet with sunflower oil and, using a tablespoon, drop the latkes onto the skillet like pancakes. Fry each side until golden and crispy. The heat should be slightly above medium.

Step 4

Serve hot, garnished with sour cream and parsley.
