- Butter - 1.8 oz
- Olive Oil - 4 tablespoons
- Salad Potatoes - 26.5 oz
Step by Step guide
Step 1
Place unpeeled potatoes in a pot with cold water and a teaspoon of salt, bring to a boil, and cook over medium heat for 20-30 minutes until the potatoes are soft. Drain the water. Allow to cool, peel, and finely chop.
Step 2
Heat olive oil in a skillet, add the potatoes, and shape them into a sort of pie, but do not pack them too tightly. Fry for 10 minutes until browned on the bottom. Flip the entire pie – first by inverting it onto a flat plate, then let it slide back into the skillet. Fry for another 10 minutes. Transfer back to the plate and drain the oil from the skillet.
Step 3
Grease a baking dish with butter and place the potato pie in it. Bake at 392°F until a crispy crust forms. This will take a little time, about 10 minutes.
Step 4
Cut the finished pie into wedges like a cake. This potato pie goes well with any dish, but especially with cold meat.
