Potato Rolls with Herring
Ingredients
- Salad Potatoes - 2 lbs
- Cream of Norwegian Herring - 1 piece
- Korean-style Carrots - 3.5 oz
- Korean-style Carrots - 3.5 oz
- Butter - 3.5 oz
- Mayonnaise - 3.5 oz
- Dried Nori Seaweed - 2 pieces
Step by Step guide
Step 1
Boil the potatoes until cooked and drain the water, leaving a little bit.
Step 2
Add a lot of butter to the potatoes and mash them. The mash should be thick enough. Allow to cool.
Step 3
Debone and skin the herring, then cut it into long strips.
Step 4
Place a sheet of nori, shiny side down, on a sushi mat. Spread the potato mixture on top of the nori, about 7-8 mm thick, leaving about 2 cm from the edge farthest from you.
Step 5
Lay the strips of herring, some carrots, and beets on top of the potato.
Step 6
Using a piping bag or just a spoon, spread mayonnaise over the herring and vegetables.
Step 7
Roll it up and chill in the refrigerator for 30 minutes.
Step 8
Slice with a very sharp knife, wetting it in water. Arrange on a serving platter and serve with wasabi or mustard.
