- Olive Oil - 1 tablespoon
- Shallot - 2 pieces
- Butternut Squash - 1 piece
- Orange juice concentrate - ¾ cup
- Salt - ½ teaspoon
- Citrus Zest Mix - 1 tablespoon
- Ground Black Pepper - ¼ teaspoon
- Salted crackers - 2 tablespoons
Step by Step guide
Step 1
Cut the shallots in half lengthwise and slice thinly. Cut the pumpkin into 4 wedges, remove the seeds, and slice very thinly.
Step 2
In a large skillet, heat the olive oil, add the shallots, and sauté until soft and golden, about 2 minutes. Add the pumpkin, zest, and orange juice. Season with salt and pepper. Reduce the heat, cover, and cook for 6–8 minutes until the pumpkin is tender.
Step 3
Remove the lid and cook for another 10–12 minutes until the liquid evaporates and the pumpkin is browned.
Step 4
Serve topped with crushed pistachios.
