Description
From simple, readily available ingredients, we created beautiful Japanese croquettes that quickly became the hit of the month at the office. First, we baked the pumpkin in the microwave until soft (you can also use an oven), then mashed it with a fork. Next, we combined the pumpkin puree with ground chicken, shaped the mixture into croquettes, and easily added pieces of mozzarella inside. The croquettes should be cooked in hot oil using any refined oil, which gives us a variety of textures: a crispy crust, mixed pieces of pumpkin and meat, and as a bonus — stretchy hot mozzarella. This snack is best enjoyed with a vibrant Japanese sauce. We recommend tonkatsu sauce or a mix of mayonnaise with sriracha sauce. Pair it with beer!
Ingredients
- Pumpkin - 14.1 oz
- Ground meat - 7.1 oz
- Butter - 1.1 oz
- Melted Cheese - 3.5 oz
- Panko breadcrumbs - 1.8 oz
- Wheat Flour - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 18 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cut the pumpkin into small pieces. Place them in a bowl, cover with plastic wrap, and microwave for 5-6 minutes until tender.
Step 3
Sauté chicken or any other ground meat in a small amount of vegetable oil until fully cooked. This will take about 10 minutes.
Step 4
Mash the cooked pumpkin with a fork. Add the minced meat and butter. Season with salt and pepper, then mix well.
Step 5
Shape the mixture into croquettes. Make an indentation in each croquette and place half a mozzarella ball in the center, then form a ball. Repeat the same process with the remaining croquettes.
Step 6
Crack the eggs into a bowl and mix until smooth. In two other bowls, place the flour and breadcrumbs.
Step 7
First, coat the croquette in flour, then dip it in eggs, and finally roll it in breadcrumbs.
Step 8
Fry the croquettes in preheated vegetable oil at 356°F until golden brown.
Step 9
Drain the cooked croquettes on a paper towel or a wire rack.
Step 10
These croquettes pair perfectly with tonkatsu sauce or a mixture of mayonnaise and sriracha.
