Ingredients
- Olive Oil - 2 tablespoons
- Spanish onions - 1 head
- Thyme - 3 sprigs
- Salt - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
- Butternut Squash - 21.2 oz
- Chicken Broth - 28 fl oz
- Peeled chestnuts - to taste
Step by Step guide
Step 1
In a large pot, heat the olive oil over medium heat.
Step 2
Add the finely chopped large onion (about 4 cups), thyme sprigs, salt, and pepper. Sauté for about 6 minutes until translucent.
Step 3
Then add the finely chopped squash and pour in the broth, bring to a boil, reduce the heat, and simmer for 20 minutes. Remove the thyme sprigs.
Step 4
Blend the soup in batches in a blender, return it to the pot, and gently reheat.
Step 5
Ladle into small bowls and sprinkle with caramelized seeds (see note).
