Pumpkin Qutab
Ingredients
- Pumpkin - 1 piece
- Onion - 1 piece
- Ground Black Pepper - to taste
- Khmeli-suneli - 1 teaspoon
- Wheat Flour - 2 cups
- Water - 1 cup
- Salt - 2 teaspoons
- Butter - 3.5 oz
- Sour Cream - 3.5 oz
- Walnuts - 1.8 oz
Step by Step guide
Step 1
First, let's prepare the dough. Pile the flour on the table and add half a teaspoon of salt.
Step 2
Carefully, in small portions, pour half a cup of warm water into the flour while constantly kneading. The dough should be firm. Knead it and set it aside in a warm place for an hour, wrapped in plastic wrap and a towel.
Step 3
While the dough is resting, let's make the filling. Take half of a medium pumpkin (or a small pumpkin whole). Cut it into large, manageable pieces, peel and seed it, and grate it on a coarse grater.
Step 4
Finely chop the onion and sauté it until golden brown. Mix it with the grated pumpkin, add a little salt and a good amount of pepper, and add spices to taste - in my case, khmeli-suneli. Add finely chopped walnuts.
Step 5
The dough is ready. Its consistency should be like that of an earlobe. Tear off small pieces (the size of a ping-pong ball) and roll them out into very, very thin ovals.
Step 6
On one half of the oval, leaving about 1 cm from the edge, place the filling. Cover it with the other half, creating a sort of semicircular envelope. Pinch the edges.
Step 7
Place on a dry, preheated skillet and fry until the dough is cooked. Nice light brown circles should appear on it.
Step 8
Stack them on a plate, generously brush each qutab with butter.
Step 9
Serve with sour cream.
