Ingredients
- Butter - 1 tablespoon
- Onion - 1 head
- Pumpkin - 2 lbs
- Pickled Apples - 4 pieces
- Coarse Salt - to taste
- Ground Cumin - 1½ teaspoons
- Ground coriander - ½ teaspoon
- Cayenne Pepper - ¼ teaspoon
- Grated Ginger Root - ½ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Water - 21 fl oz
- Chicken Broth - 17 fl oz
- Habanero Pepper - 1 piece
- Sour Cream - to taste
Step by Step guide
Step 1
Peel the pumpkin, remove the seeds, and chop finely. Also peel the apples, remove the cores, and chop finely. Remove the seeds from the jalapeño and slice it into thin strips. Peel and finely chop the onion.
Step 2
Melt the butter in a large saucepan over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Add the pumpkin and cook, stirring, for another 10 minutes until soft.
Step 3
Add the apples, spices, broth, and water to cover everything completely (you can add a little more water if needed). Bring to a boil, reduce the heat, and simmer for about 30 minutes until the vegetables are soft.
Step 4
Blend the soup with an immersion blender until smooth, adding more water if desired to reach the desired consistency.
Step 5
Serve with sour cream, garnished with jalapeño pepper.
