Ingredients

  • Pumpkin - 10.6 oz
  • Madeira - 3 fl oz
  • Garlic - 1 clove
  • 20% Cream - 3.5 oz
  • Water - 3 fl oz
  • Cheese - 3.5 oz
  • Rosemary - 1 sprig
  • Sugar - 1 tablespoon
  • Salt - to taste
  • Basil - to taste
  • Black sesame seeds - to taste
  • Pumpkin Seeds (peeled) - to taste
  • Balsamic Cream - to taste

Step by Step guide

Step 1

Finely chop the pumpkin, pour in water and Madeira, add sugar, spices, herbs, and garlic. Place on heat and cook until soft.

Step 2

Remove the herbs and garlic, blend until smooth, return to heat, add cream, and wait for the soup to boil.

Step 3

Grate the cheese and gradually add it to the soup, stirring thoroughly after each addition until dissolved. Season to taste, garnish, and serve hot.
