Pumpkin Soup with Nut Paste

Ingredients

  • Pumpkin - 2 lbs
  • Butter - 1.8 oz
  • Onion - 1 piece
  • Chili Pepper - 1 piece
  • Fresh Ginger - 1.1 oz
  • Garlic - 1 clove
  • Vegetable Broth - 1 qt
  • Lime - 1 piece
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Cilantro - to taste
  • Natural Yogurt - to taste
  • Pumpkin Seeds - to taste
  • Nut Paste - 1.8 oz

Step by Step guide

Step 1

Peel the pumpkin and cut it into small cubes.

Step 2

In a pot, melt the butter and add the chopped onion, sauté until soft.

Step 3

Add the chili (1 fresh or a pinch of dried), 3 cm of fresh ginger, and the clove of garlic.

Step 4

After a couple of minutes, add the pumpkin, season with salt and pepper.

Step 5

Cook for another 5 minutes.

Step 6

Pour in the broth and simmer for 15–20 minutes until the pumpkin is soft.

Step 7

Transfer the finished soup to a blender, add the nut paste, and blend until smooth.

Step 8

Pour in the lime juice and add finely chopped cilantro.

Step 9

Serve with natural yogurt and pumpkin seeds.
