Ingredients
- Pumpkin - 17.6 oz
- Tomatoes - 2 pieces
- Carrot - 1 piece
- Garlic - 5 cloves
- Olive Oil - 4 tablespoons
- Basil - to taste
- Thyme - to taste
- Orange juice concentrate - 8 fl oz
- Grated Ginger Root - to taste
- Salt - to taste
- Shrimp - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
While preheating the oven to 356°F, prepare a mixture of olive oil and spices (basil, thyme).
Step 2
Peel the vegetables and cut the pumpkin and carrot into pieces, halve the tomatoes, and separate the garlic into cloves. Dip them in the oil with spices. Place them on a baking sheet lined with parchment paper.
Step 3
Roast the vegetables for 15–20 minutes at 180–392°F (depending on your oven).
Step 4
Blend the roasted vegetables, add orange juice, ginger, salt, and pepper to taste, and mix again.
Step 5
Pour into a pot and add a little boiling water, then leave on low heat for 3–5 minutes.
Step 6
When serving, add shrimp or seafood. Optionally, garnish with almond petals or pumpkin seeds.
