Ingredients
- Pumpkin - 14.1 oz
- Tomatoes - 2 pieces
- Garlic - 3 cloves
- Bay leaf - 2 pieces
- Salt - a pinch
- Ground Black Pepper - a pinch
- Butter - 3 tablespoons
- Sugar - a pinch
- Chicken Broth - 1 qt
Step by Step guide
Step 1
Heat the butter. Sauté the finely chopped onion and garlic.
Step 2
Pour boiling water over the tomatoes and chop them into cubes. Peel the pumpkin and cut it into small pieces.
Step 3
Sauté the pumpkin with the onion, adding a pinch of sugar. Then add the tomatoes and bay leaves. Simmer for about 10 minutes.
Step 4
Bring the broth to a boil. Add thyme, salt, and pepper. Transfer the vegetables to the broth and cook for about 30 minutes until the pumpkin is soft.
Step 5
Pour the soup into a blender, add cream, and blend everything well.
Step 6
Pour it back into the pot, add a few drops of chili sauce, and bring to a boil.
Step 7
Serve with fresh parsley.
