Ingredients
- Pumpkin - 14.1 oz
- Turnips - 1 piece
- Carrot - 1 piece
- Sweet Potato - 2 pieces
- Onion - 1 head
- Garlic - 1 head
- Thyme - 5 sprigs
- Olive Oil - 2 tablespoons
- Grated Ginger Root - 1 piece
- Chicken Broth - 23 fl oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Peel the pumpkin, turnip, sweet potato (small-sized), and carrot, and cut them into medium-sized pieces no thicker than 1 cm.
Step 3
Cut the onion into 8 wedges.
Step 4
Cut the garlic in half crosswise without peeling.
Step 5
Peel a piece of ginger about 5 cm long and cut it into pieces no thicker than 0.5 cm.
Step 6
In a baking dish, mix the pumpkin, turnip, sweet potato, onion, and ginger.
Step 7
Drizzle with olive oil and place the garlic halves on top, then sprinkle with fresh thyme.
Step 8
Bake for about 40 minutes until the vegetables are tender. Squeeze the garlic into the vegetables, discarding the skins.
Step 9
Transfer the roasted vegetables to a blender and blend until smooth, gradually adding the chicken broth to achieve your desired thickness.
Step 10
Serve with garlic bread.
