- Pumpkin - 2 lbs
- Oranges - 1 piece
- Lemon - 1 piece
- Sugar - 12.3 oz
- Cinnamon - 1 piece
- Clove - 2 pieces
- Allspice berries - 5 pieces
- Ginger - 0.5 oz
- Apple Cider Vinegar - 4 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cut the pumpkin flesh into 3–4 cm cubes.
Step 3
Grate the zest from the orange and lemon, being careful not to touch the white pith.
Step 4
Cook a syrup using 500 ml of water and sugar.
Step 5
Cool the syrup, then add the zest, cinnamon, cloves, allspice, and thinly sliced ginger.
Step 6
Bring to a boil, add citrus juice and vinegar, then toss in the pumpkin cubes.
Step 7
After boiling again, cook the pumpkin for 15-20 minutes. It should become tender but not fall apart.
Step 8
Pack the pumpkin into sterilized jars.
Step 9
Fill with syrup to the very top. Seal the jars, turn them upside down, and wrap them in a towel.
Step 10
Once the jars have completely cooled, return them to their original position and store them in a dark place.
