Pureed Chickpea Soup

Ingredients

  • Olive Oil - 2 tablespoons
  • Leek - 2 stalks
  • Chickpea - 26.5 oz
  • Chicken Broth - 1 qt
  • Potato protein - 1 teaspoon
  • Salt - to taste

Step by Step guide

Step 1

Heat the oil in a large pot. Add the peeled and finely chopped leek and cook over low heat, stirring, for 15 minutes until it turns golden brown. Add 300 ml of broth and cook for 5 minutes, then remove the pot from the heat and combine its contents with the remaining broth.

Step 2

Blend the chickpeas in portions in a blender until smooth, adding 2 tablespoons of broth to facilitate the process. Then transfer the chickpea paste to the pot with the leek and broth and heat slowly.

Step 3

Mix the starch in a cup with 2 tablespoons of water; once there are no lumps, pour the mixture into the pot with the soup. Cook on low heat for another 5 minutes. Season with salt to taste. Serve with croutons, toast, or simply crackers.
