Quick Carrot Soup with Coriander
Ingredients
- Onion - 1 head
- Vegetable Oil - 1 tablespoon
- Ground coriander - 1 teaspoon
- Potato - 1 piece
- Carrot - 15.9 oz
- Chicken Broth - 1 qt
- Cilantro - to taste
Step by Step guide
Step 1
Heat the vegetable oil in a pot over medium heat. Add the finely chopped onion and sauté for 5 minutes until soft. Add the coriander and the peeled and diced potato. Sauté for a minute.
Step 2
Add the peeled and finely chopped carrot and the broth. Bring to a boil, reduce the heat, cover, and simmer for 20 minutes until the carrot is soft.
Step 3
Transfer to a blender and add a handful of cilantro leaves. Blend until smooth. Return to the pot, season with salt and pepper, and gently heat through.
