Quick Cured Red Fish Fillet
Ingredients
- Red mullet fillet - 17.6 oz
- Vegetable Oil - 2 tablespoons
- Sugar - 1 tablespoon
- Salt - 3 tablespoons
- Green peppercorns - 10 pieces
- Bay leaf - 2 pieces
- Coriander essential oil - ½ teaspoon
- Vodka - 1 tablespoon
- Water - ½ liter
Step by Step guide
Step 1
Prepare the marinade: pour water into a saucepan, add bay leaves, coriander, peppercorns, salt (non-iodized), and sugar.
Step 2
Stir, bring to a boil, and let the marinade boil for 1 minute.
Step 3
Remove from heat and let it cool completely (do not place the fish in hot marinade).
Step 4
Slightly frozen fillet should be cut into slices about 7 mm thick, and the skin should be removed.
Step 5
Let the sliced fillet thaw completely.
Step 6
Place the prepared pieces in a glass or plastic container in 1-2 layers, and pour the marinade over them.
Step 7
Add alcohol to the cold marinade.
Step 8
After 15 minutes, the lightly salted fish is ready.
Step 9
Place the fish on paper towels to dry, and brush with vegetable oil on top.
