Description

Relish is a dish made from thermally processed or pickled chopped vegetables or fruits, typically used as a table condiment. Relish can be characterized as 'pieces of vegetables or fruits in a sauce,' although the nature of the sauce depends on the chosen vegetables or fruits. Relish can consist of a single type of vegetable or fruit or a combination of them. The components of relish can be chopped to various consistencies, grated, or simply finely diced. Generally, relishes do not have a uniform consistency like ketchup. As for the flavor palette of relishes, it can be very diverse: relishes can be sweet and spicy, hot and mild, but usually have a pronounced flavor meant to enhance the taste of the dish to which the relish is served. Chutneys can also be considered relishes. As a secret — serve with cream cheese; it's incredibly delicious! ))))) By the way, this is my personal, original recipe...

Ingredients

  • Eggplants - 2 pieces
  • Onion - 1 head
  • Carrot - 1 piece
  • Soy Sauce - 3 fl oz
  • Vegetable Oil - 1 fl oz
  • Date honey - 2 tablespoons
  • Mild Chili Spice - ½ piece
  • Salt - to taste
  • Balsamic Vinegar - 1 fl oz
  • White Pepper (whole) - to taste

Step by Step guide

Step 1

First, preheat the oven to 392°F, preferably with convection. Line a baking sheet with parchment paper, greasing it with oil.

Step 2

Slice the eggplants into lengthwise strips about one centimeter wide. Then cut them into lengthwise strips and, accordingly, into small cubes (sometimes eggplants are salted beforehand, left for about 20 minutes, and then rinsed — I never do this, but it's a matter of taste...).

Step 3

Finely chop the large onion.

Step 4

Grate the carrot on a coarse grater.

Step 5

Finely chop half of the chili pepper, removing the seeds — by the way, you can use a spicier one if you like.

Step 6

Mix the eggplants with the onion, carrot, and chili directly on the baking sheet. Then pour over the mixture of vegetable oil, soy sauce, and honey. Mix everything gently with your hands.

Step 7

Place in the oven for about 15–20 minutes (with convection). If using a regular oven, it will take about 30–35 minutes.

Step 8

Stir a couple of times during cooking.

Step 9

When the vegetables turn a dark golden color, they are ready.

Step 10

Remove from the oven, add balsamic vinegar. Mix everything and let it cool. You can add cilantro and garlic (in my opinion, it's unnecessary).
