- Olive Oil - 2 tablespoons
- Scallions - 1 bunch
- Courgette - 3 pieces
- Frozen green bean pods - 7.1 oz
- Watercress - 3.2 oz
- Chicken Broth - 30 fl oz
- Mint Leaves - to taste
- Natural Yogurt - 2 tablespoons
Step by Step guide
Step 1
Heat the olive oil in a pot over medium heat and add the finely chopped green onions and diced zucchini. Stir, cover, and cook for 3 minutes.
Step 2
Add the peas and broth. Bring to a boil, reduce the heat, cover, and simmer for 4 minutes.
Step 3
Then remove from heat and add the watercress and a handful of finely chopped mint leaves. Stir until the greens wilt.
Step 4
Pour the soup into a blender and puree until smooth. Add the yogurt. Season with salt and pepper.
